As every executive knows, corporate expense accounts are tight. People travel less. They eat out less. For important occasions, however, it's still important to dust off the AmEx card and take a special client to a special restaurant.

 

For the second year in a row, we have surveyed the best business restaurants around the country. Last year's list received a huge outpouring of responses--mostly positive but with a few gripes of forgotten cities. This year we have added Las Vegas and Raleigh-Durham to our list.

 

As with last year, we judged the restaurants against a variety of criteria. A good business restaurant must be easy to find (no unmarked doors beneath a stairwell) and near the financial area or downtown. It's a given that the food must be superb, as well as the service. A bad oyster or slow service can ruin not only a meal but also, far worse, a business relationship.

 

The décor plays an important role as well. A dimly lit boîte decorated with flowers and candlelight may be perfect for a Friday night date, but it sends an inappropriate message for a business meeting. Other factors such as noise level are important; if you can't hear what your companion is saying above the din, what's the point? Many of the restaurants on our list even have private dining rooms for when something beyond a regular business lunch or dinner is needed.

 

There's also another factor. A city's top business restaurant can act as a sort of success barometer. In Manhattan, for example, Michael's is the watering hole of the city's media elite, where publishers and chief executives not only rub elbows but also keep tabs on who's there and who's eating with whom. For the Hollywood elite, The Ivy in Los Angeles is the place to be seen. And no Silicon Valley venture capitalist--yes, there are some left--would pass up the large portions at Buck's in Woodside, Calif.
